Another Funked Up Belgian style saison finished with Brettanomyces. The grain bill includes Pilsner, Vienna and Munich malts. The addition of spelt provides a crisp, dry finish and 60# of honey gives it a complex sweetness and lighter body. We fermented with a Belgian Saison yeast and then tucked this away for 6 months in steel wine barrels where we added the juice of hundreds of pounds of cantaloupe and honeydew melons. Then inoculated the barrels with a wild yeast, Brettanomyces Bruxenellenis to eat the extra melon sugar and produce funky flavors. If that is not interesting enough we bottle and keg conditioned (naturally carbonated) the entire batch using only yeast, more honey and melon juice (that’s crazy stuff there folks). The resulting beer is fresh, fruity and funky.

Bottle thanks to the Ken. Gusher! It pours cloudy golden-orange with a small white head. The nose is soft fruit, melon, pear, brett, funky barnyard, light ketchup and wood. The taste is bitter, earthy brett, melon, citrus peel, spice, straw, barnyard, white wine and sherbet with a dry, earthy finish. Medium body and moderate carbonation. Not quite as I was hoped. Perhaps a touch sweet. Alright.

Bottle shared pre Zwanze 2014. Thanks to Kenny! Pours hazy gold with a creamy white head, some floaty bits. Lots of fresh citrus in the aroma, soft funk, pale bread, lemon, tangerine. Medium sweet flavor, some alcohol, more tangerine, melon, some meringue. Medium bodied with average carbonation. Decent balance to finish, more ripening citrus fruits, lots of tangerine, lemon squash, a bit of moldy wood. Not bad.

Bottle at Craig’s. Gusher! Pours hazy, floaters with a thin white head. Aromas of bready yeast, honey, white pepper. Taste is honey, dry finish. Disappointing.

Bottle, 75cl corked. A gusher, producing an unclear, orange body under a dense, collapsing, off-white head. The aroma is very fruity, with some sugary notes and pale malts. Cucumber, melon, some saison yeast and a spiced touch too. Medium body, semi-dry and quite effervescent, with flavors of pale malts in the back. Cucumber, melon, pine cone hints, yeast and a generic fruityness, and some bitterness. Honey notes towards the finish. Decent, but not impressive. 140830

Bottle @ Danish Ratebeer Summer Gathering, 2014. Pours cloudy golden with a frothy white head. Yeast, mild young brett and grass. Distinct fruity note.. Floral hoppy. Dry finish. Decent!

Bottle, 8%. Hazy dark yellow with medium off-white head. Aroma is malt, fruit, hop, yeast, brett and spices. Flaovur is malt, yeast, brett, little over carbonated, little sweet, medium dry, notes of lemon, spices and a little bitter.

Pours hazy golden with a off-white head. Aroma has notes of malt, yeast, wheat, brett, citrus, and a hint of sourness. Taste is light sweet and light sour with a yeasty, slightly dry finish. Body is medium, texture is thin to oily, carbonation is fizzy

Bottle @ fonefan tasting. Hazy golden with a white head. Aroma is sweet, malty, fruity, melon, bretty and citrus. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. Too high carbonation. 300814
