Another Funked Up Belgian style saison finished with Brettanomyces. The grain bill includes Pilsner, Vienna and Munich malts. The addition of spelt provides a crisp, dry finish and 60# of honey gives it a complex sweetness and lighter body. We fermented with a Belgian Saison yeast and then tucked this away for 6 months in steel wine barrels where we added the juice of hundreds of pounds of cantaloupe and honeydew melons. Then inoculated the barrels with a wild yeast, Brettanomyces Bruxenellenis to eat the extra melon sugar and produce funky flavors. If that is not interesting enough we bottle and keg conditioned (naturally carbonated) the entire batch using only yeast, more honey and melon juice (that’s crazy stuff there folks). The resulting beer is fresh, fruity and funky.

Old rating - A 750ml bottle from Dunnel's in Jersey. Pours deep amber with a white head. Aromas & tastes of fruit, citrus, honey, clove, spice, funk, sour & brett. Medium body, touch acidic. Very good.

Tap at Beer&Food Attraction 2020, in Rimini, Italy. Pours amber gold, transparent, with minimal foam. Aroma is a mix of fruity and a hint of acetic. Body and carbonation are average. Taste is moderately sour, with a hint of sweetness. Final is average.

Bottle, courtesy of tinu, thanks! Pours cloudy amber with a huge head, gusher. Aroma is melon, funk, slight rust. Body is medium, softly tart but became flat through gushing. Fruit, melon, some sweetness. Juicy. Good!

Bottle: Poured a clear golden color ale with a nice foamy head. Aroma of floral honey with subtle melon notes is pleasant. Taste is a mix of floral honey mix with some strong melon notes. Body is average with good carbonation. Hard for me to say I like it since I am not a big fan of melon but base beer seems to have lots of potential.

A hazed golden ale with a thin white head. In aroma, sweet fruity malt with light cloves, banana esters, light watermelon, light Brett, very nice. In mouth, a nice fruity malt with light watermelon, light Brett, curacao, very nice and complex.

750ml bottle [little gusher]. Cloudy, orangey golden colour with average to huge, frothy, half-way lasting and lacing, white head. Funky, unspecific tartish fruity aroma, hints of melon, red berries, blood orange, kefir. Taste is tart, fruity, hints of melon, red berries, apricot, blood orange, kefir; prickling carbonation. Not sure if the "fresh, fruity and funky" result I found was really intended.

Bottle @ DØE meeting. Pours hazy dark yellow with a small white head. Aroma of malt, yeast, brett, light spice, honey, flowers, fruit, melon, tart fruit. Flavor is light tart, malt, grain, yeast, bretty, honey, tart fruity, little spice. Medium body, lively carbonation, light acidic finish. 211015

The beer is light orange gold in color. The liquid is moderately cloudy, and the head is white and rocky. The bottle gushed gently upon opening. I’m getting more and more melon in the aroma as the beer warms. There’s also a mildly medicinal pale malt sweetness. Sticky, sugary fruit flavors - mango, guava, pineapple. Mild yeasty earth and spice. It almost smells like fruit-flavored candy. Taste is medium sweet for a saison but dries out some in the finish with moderate earthy bitterness. Again, lots of fruit in the taste, but there’s also more of that oddball medicinal flavor. It might be the melon but the mix with the malt sweetness is a bit off for me. Mouthfeel is a bit sticky and the sweetness is bordering on cloying, even though it’s fairly light. I think the concept for this beer would have worked better in a smaller package. At 8% abv, everything just feels too sweet and big for what should be delicate fruit and brett complexity. It’s not bad, but things don’t come together.
