Dark Honey Ale
Just cause it's dark and German doesn't mean it's an alt. Based on the obscure Kottbusser style of beer, this surprisingly dry beer retains all the aroma and nuance of honey (from bees) and molasses (not from bees) creating a perception of sweetness through cool, controlled fermentation. Because we're sweet enough damn it.
Hops: Strisselspalt, Nothern Brewer, Hallertau Hersbrucker
Malts: Pils, Dark Munich, Wheat Mal, Chocolate Malt, Flaked Oats
Secret Ingredients: Honey and Molasses

Draft at Monk’s Pub last year, from notes. Deep amber to brown color, with a thin layer of foam. Smell holds no surprises, seems to suggest more of a light blonde ale. The tastes more complex as I go. Some honey and spiciness starts to show further down. Also a touch of smoked malt. Crisp lager finish behind a growing honey presence.

12 oz. bottle purchased at Winooski Beverage Warehouse. Dark brown with ruby highlights around the edges. Thin white head. Aroma is sweet with sugary molasses and hints of oats.
Flavor is mostly molasses with a moderate amount of sugar from the honey plus molasses. I thought the oats would beef up the body, I was incorrect with that assumption. Body is thin. Hints for dark earthy malts. Weak nutty malt. Well, really not bad at all. Drinkable with out question But I guess my expectations were way to high based on the ingredients.

Tap at CBC 2014. Beer in the glass dark brown, huge head. Mild hoppy aroma. Starts malty, a bit smokey, modest dry, not too intense. Finish soft-malty. Well balanced finish, quite drinkable. Nice!

12 ounce bottle from Wine Warehouse, opened 6/3/14. Pours a very dark brown color with a thin offwhite head. Poor head retention. Aroma of toffee, honey, mild spice. The taste is honey, brown sugar, toffee, mild spice, nuts and citrus. Medium bodied, moderate carbonation, slight lingering spice.

Walnut nose, some plastic. Clear ruby brown, medium tan head little retention. Charcoal, subtle charred meat, smoky finish. Still a chemcial note, but much less pronounced on the palate. Light body, dry, frothy. I really don’t care for this at all. The honey and molasses fermented out bone dry and imparted no special character to the beer.

Keg at the Copenhagen Beer Celebration 2014, yellow session. 02/05/2014. Clear caramel / red coloured pour with a lasting cream head. Aroma is earthy, rye bread, mineral. Flavour is german yeast, cereal nutty malts, slight mineral water profile. Disappointing.
