The Brew & Tasting Notes
We use a selection of five North American hops and a triple dry-hop regime to create powerful aromas of papaya and mango. This is built on a backbone of drum-roasted malts and wheat, giving our Tropical IPA its gorgeous amber color and a smooth, refreshing finish with plenty of punch.
This is a modern Cayman IPA that is hazy, juicy, and bright, not a bitter “hop bomb.”

Purchased at Chisholm Market on the north side of Grand Cayman Island. The pour is a slightly hazy golden color with a half-inch off-white head that dissipates quickly. The aroma is citrus, malt, grain, and a slight toastiness. The taste was a nice balance of malt and hops, with the malt initially coming through as cereal and caramel, followed by floral notes. The citrus hops were more prominent on the back end. The body was medium, with soft natural carbonation and a dry, citrusy, softly bitter finish. Nice one.
