Caramelised Miso paste + Tonka beans + Rum barrels
Taste and flavour are our inspirations, as much in food as in drink. Brett tasted our caramelised miso butter at Jessop House and an idea was born. An oven of caramelising miso here, a tincture of tonka bean there and Billionaire was born. It was great!
And still we wanted to take it further. This is the first time we’ve aged beer in rum barrels and The first time we’ve aged Billionaire. On initial tasting, we can’t imagine aging it in anything else. Add touches of tannin and acidity to Billionaire and you’re Ramboozled

From tap at In De Wildeman, Amsterdam. Aroma is dark roast with fruits, oak, lots of rum, raisins, chocolate, dark berries, booze, liqueur, syrup, soft notes of tonka beans. Sweet flavour with a mild bitterness. Body is full and rich. Very hearty and sweet with lots of lovely rum barrel notes, firm chocolate, I love this beer.

Bottle. Very dark brown, practically black body under a small beige head. Strong aroma of dark malt, chocolate, dark fruit, raisins and alcohol. Taste is sweet malt, with dry fruit, Rum, salt licorices, tonka, red berries and balancing acidity. Fine body and long lasting aftertaste. There is really a lot going on here, wish I had this bottle by my self and not at a beer tasting.

KØLF 150520. Black color with a tan head. Aroma is roasted malt, coffee, rum. Flavor is roasted malt, coffee, raisin, berries, alcohol, sourness, licorice, sugar. Complex beer.

Black with a minimal light brown head. Aroma of rum and dark fruits. Sweet with a good dark fruit Finnish and some rum sense. Medium, a bit oily.

Sampled from bottle @ RBBWG 2018, hosted by Beerlovers Bar, Antwerp. Opaque black color, small brown head. Aroma is malts, tonka beans and the rum BA clearly comes through. Taste malts, rum, raisins, distant sweetness, but the light acidity and fruit in there really annoys me. No, not my kind of RIS.

Draught @ In De Wildeman, small sample, thanks Susette! Black color with a beige head. Aroma's; sourish, umami, a bit raspberry, roasted. Retronasal it's funky, sourish, roasty, sweetish, red fruit. Flavor is moderate sweet, light sour, wood, roast. Medium bodied. Finishes sourish first, then woody, light bitter. Funky/sour stouts are usually not for me but this was interesting.

Bottle at Jason and Traceys, 01/06/18. Pitch black with a decent tan covering that dissipates to a swirl. Nose is sweet malts, caramel, biscuit, brown sugar melt, light tangy dark fruits. Taste comprises tangy dark fruits, rum barrell, light brett, dates, light funk, red berry must, spice, molasses, bitter sweet fruits. Medium plus body, oily feel, mellow booze in the close. Decent funky impy.

Tap at In de Wildeman. Near black with light tan head. Big sweet roasted chocolate malts. Slightly balsamic, woody. Moderate sweet and bitter. Medium body and soft carbonation.

8 4 8 4 16Draft at In De Wildeman. Black with a beige head. Aroma of fruity rum, oak, dark chocolate, tonka, vinous notes, tannins, toffee and caramel. Flavour is heavy sweet and moderate bitter with an above light sourness. Full bodied with soft carbonation.

Bottle sample @ RBBWG Mar 10h. 2018, thanks Marko. Brune foncée, col crémeux café au lait. Arôme offre de belles effluves des 10% le tout accompagné de belles notes de grillé, rhum est bien placé avec une petite pointe d'amertume houblonnée, retrouve aussi un léger côté caramélisé qui avec le brett Wild Beer rappelle presque une vieille brune. Palais est malté, grillé, fin chocolaté, roast avec touche de fun typique de cette brasserie, le tout se prête très bien à l'effet plus stout de cette bière, encore une fois rappel à une vieille brune.
