We got together with Sam, from London's Boxcar Brewery, to brew a spontaneously fermented and barrel-aged take on their phenomenal Double Dark Mild. The collaboration ended up consisting of three brews, resulting in two distinct blends. One fermented in bourbon barrels with the blending leaning more towards a vatted porter. Old Dark Mild Bourbon Barrel is made from a blend of three beers, produced in the July's of 2021 and 2022, using a double mash to add depth and body to the beer. The grist was made from British ale malt, roasted and crystalised speciality malts, and rolled oats. Fermentation took place solely in Buffalo Trace bourbon barrels, adding wonderful heady aromatics of burnt sugar, vanilla and dark roast coffee beans. The older beer brought a rich sweetness and significant acidity to the blend. The younger beer was more tannic, dry and less acidic, adding structure to the body and poise to the finish.

Bottle, 750 ml at my Grande. Pours brownish with beige head. Nice intensive fruit, dried and fresh, pleasant tartness. Some caramel and wood. Very nice.

Damn. I had high hopes for this... and its surpassed them. "Its a Mild Jim, but not as we know it'. Aroma of bourbon and burnt sugar. Starts similar to a flanders red, but smoother. The finish is dry and fruity. All the flavours compliment. Stunning!

Bottle. Mills online. Clear deep chocolate brown. Slim swirl of dense beige foam. Unreal this. Very complex but stupidly easy drinking. Juicy Flanders vibe up front. Light sweet bourbon barrel. Hint of dark chocolate. Taste is jammy juicy and lightly tart. Airy on the palate. Big juicy and tart finish. Absolute class .
