Secret Spices + Roasted Apricots + Wild Yeast

We love nothing better than Belgian-style saison but with this blissful version we’ve added our own Wild interpretation of the style by adding a dash of funky Brettanomyces yeast plus roasted apricots and a hush-hush blend of spices. All of this makes for an extraordinary beer with an array of aromas that leap out of the glass followed by a spicy, fruity, tart and peppery palate and a long lingering finish.

Bliss can be drunk fresh or left to age when it becomes drier and more complex as the Brett (the yeast not our brewer!) gets to work in the bottle. This is the sort of beer where study and contemplation is essential.

50kg of roasted apricots went into the boil with more added to the fermentor as well as our blend of spices.

Draft @ Malmö Öl & Whisky Festival. Pours a hazy amber color with a small off-white head. Has a fruity malty spicy ginger aroma. Fruity malty spicy yeasty flavor. Has a fruity malty spicy yeasty weak tart finish.

Draft. Rich amber beer with a cream head. Light dark malt aroma wit light tartness. Tart and light sour flavor with light cocoa and light fruitiness. Medium bodied. Tartness and light sourness lingers with light cocoa and light fruitiness.

Bottle from Hop Hideout, Sheffield. Brownish, copper colour. Cream coloured, thick, lasting head. Tea leaves. Orange zest. Light spice. Light bread dough. Taste has an initial, burnt caramel sweetness, before a vinous, dryness. Some yeasty tartness. Light, astringency on the palate. Long, dry finish. Slightly odd, but enjoyable, nonetheless.

Keg at The Hanging Bat. Brown with an off-white head. Fruit and malt aromas, surprisingly roasted malt flavours coming through, expected more sourness. Almost has a stout nose. Funk-sour on the taste though, and apricot finally. Strange and interesting. Too fizzy, mind.

Keg at brewdog Shepard’s bush. Clear bright red colour with a lasting off white head. Aroma is pargummed sweet cardamom honey and belgian yeast esters. Flavour is sweet earthy dirt and honey malt. Low belgian blond yeast and some perfume spices. Short woody duration. Drinks pretty good. Light sweetness on the palate.

Rustico, Arlington tap ($12): Pours light brown with a small head. Aroma is spice, some Brett funk, but mostly just underwhelming. Taste is similarly underwhelming. All-spice plus some funkiness, but nothing really deep and unique. For the price, this was a disappointment.

Keg at The Hanging Bat. Hazy ruby/brown body with a faint white film. Light lacing. Aroma of blood orange, rye and aniseed. Flavour is very unusual - plain crisps, apricots, wood, light spice and a hint of strawberry flavoured Hubba Bubba. Dry finish. Thin body with a very oily texture. Soft carbonation fizz. A really unusual beer that tastes a bit rough around the edges but is certainly complex and interesting. The apricots come through well.

330ml bottle. Cloudy amber colour with huge, frothy, diminishing, minimally lacing, off-white head. Fruity, yeasty aroma, hints of apricot, a peppery spicy touch, floral and herbal notes, rosemary, lavender. Taste is minimally tart, fruity, floral, herbal, minimally soapy; an earthy and nuttily malty touch in the finish. Fizzy carbonation.
