Secret Spices + Roasted Apricots + Wild Yeast
We love nothing better than Belgian-style saison but with this blissful version we’ve added our own Wild interpretation of the style by adding a dash of funky Brettanomyces yeast plus roasted apricots and a hush-hush blend of spices. All of this makes for an extraordinary beer with an array of aromas that leap out of the glass followed by a spicy, fruity, tart and peppery palate and a long lingering finish.
Bliss can be drunk fresh or left to age when it becomes drier and more complex as the Brett (the yeast not our brewer!) gets to work in the bottle. This is the sort of beer where study and contemplation is essential.
50kg of roasted apricots went into the boil with more added to the fermentor as well as our blend of spices.

Bottled 330m ABM. Deep ruby color, small steady off-white head. Slightly tart, earthy aroma with hints of berries. Light to medium-bodied. Not so much Bretta in flavor, of course some. Berries, earthy cellar notes, some spices (allspice). Meh.

Draft. A hazy golden beer with a beige head. The aroma has strong notes of spices, combined with medium notes of malt and caramel. The flavor is sweet with notes of malt and caramel, leading to a bitter finish.

From tap. Pours cloudy orange with a small white head. Aroma herbal and pine. Bitter, spiced and medium dry herbal. Ends bitter and light spiced. Lasting dry pine into the finish. Dry and bitter, spiced finish.

(Draught at BrewDog Stockholm, 14 Sep 2013) Dark amber colour with frothy, off-white head. Malty, spicy nose with notes of cardamom, ginger, bready malt and spicy yeast. Malty, fruity taste with ginger, cardamom, gingerbread cake, dried fruit and a spicy yeast character. Medium body, with a certain sweetness. Quite lively carbonation. Lots of spices all over the place. Hardly balanced, but interesting and quite enjoyable.

Bottle courtesymof nate2g, thank you sir! Hazy amber color, huge white head. Aroma is slightly medicinal, but there’s definitely a bit of bretty dustiness to it. The taste has lots of spice and some fruit, again with a dusty and funky edge. A good start, but needs work.

Bottle at home, from Beermerchants.com, 04/08/13. Slow gusher! Murky dark amber - festival toilet water colour with a big frothy beige head. Nose is tarte fruits, funky notes, bitter apricot, orange rind. Taste comprises tarte stewed apricots, light sugar, bitter dark fruits, light yeast, farmy, earthy notes. Medium bodied, fine carbonation, dry funky finish. Decent Belgian saison affair.

Clear dark brown beer, big pale cream coloured head. Smooth palate with a little fine carbonation. Mild malt cream with a littlr tangy apricot in good balance. The spices are not subtle and neither are they overdone,. They give the beer a slight pumpkin beer vibe. Finishes semi dry. Fresh and interesting.

Draught @ Queens Head, 66 Acton Street, St. Pancras, Greater London, England WC1X 9NB.Unclear matt medium red orange colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, spicy, ginger, nettles. Flavor is moderate to heavy sweet and bitter with a long duration, spicy bitter, sweet malt, spicy. Bottle at Euston Tap. It pours cloudy amber with a thick beige head. The nose is earth, spice, warmth, brown bread, faint apricot, roast squash and peach. The taste is earth, spice, wood, light tang, apricot yoghurt and hay with a dry, earthy finish. Medium body and moderate carbonation. I like the idea, but It’s poorly executed.

330ml bottle. Pours a hazy orange brown with a large head. Aroma is gassy, with subtle apricot yoghurt. Taste has a small amount of funk and fruit, but the carbonation overpowers it a little. Slightly burnt finish.
