Fir Tip Pale Ale

Dripping Earth is a fir tip pale ale that we brewed with locally foraged fir tips and young fir branches. We started with a base of German pilsner malt, English pale malt and flaked oats, then hopped it in the kettle with Centennial, McKenzie and Simcoe. We then added in a blend of freshly picked fir tips and young fir branches and allowed this blend to steep before being cooled down to fermentation temperature. Dripping Earth was fermented cool with our house Kölsch strain and then dry hopped with Mosaic, McKenzie, and Chinook LupoMAX.

On tap at The Beer Junction, pours a clear bloods with a small white head. Aroma has bright tangy hops, some woody pine, and crisp biscuity malt. Flavour has a bright woody piney hop character, light fir tips, and crisp biscuity malt. Dry, woody, and piney, with nice accentuation from the fir. Very good.

Fir tips, pale and hazy, i like the fir tip character here, good malt base, rounded hop lending complementary citrus.
