To make the base of Negroni we blended three different golden sour beers – one aged in a vermouth barrel for 9 months, one aged in an amaro barrel, and one from a gin barrel. After blending, we condititioned the beer on a complex combination of botanicals – fresh bitter orange peel and lemon peel, dried wormwood, calamus, fennel, sage, orris root, rosemary, cinnamon, clove, thyme, marjoram, hibiscus, juniper, and coriander – all chosen to mimic the intense herbaceous, zesty, bitter, and orangey aspects of a proper negroni.

Bottle. Fizzed up quite a bit. It's opaque and has an odd purpley-pink colour. Certainly doesn't look like a negroni. Smells more like an Indian grocer than a cocktail, lots of cinnamon, liquorice, roots and citrus peel. On the palate, lots of bitterness - that's a big wormwood bitterness, balanced and clean tartness, herbs everywhere, citrus. There's a lot going on. But the wormwood bitterness is the star of the show, because it's unusual, appetizing, and creates a fairly unique experience in the beer world.
