[dahy-an-uh] Dedicated to a woman very dear to our family who we feel embodied everything that this beer is - wild, elegant and beautiful. This iteration of Diana, our rustic saison, was brewed with pilsen, buckwheat, spelt , oats and triticale - a wheat + rye hybrid grain grown in the Skagit Valley. Hopped with sorachi ace and lemondrop, Diana underwent a 3 month fermentation on a mixed farmhouse culture. Towards the end of fermentation, we dryhopped with sorachi ace for light notes of lemongrass and dill.

Vibrant hazy yellow, thin head. Big sorachi nose, ranging from stone fruits to sulphur but also some pale malt.

Draught at the brewery
Murky yellow-orange colour. Strong character from the farmhouse yeast and strong character from the Sorachi, i.e. lemon pie and lemongrass, but also with strong astringency.
Weird and not exactly pleasant.
