Winter Lager

Given our neighborhood's Nordic heritage, we thought It would be fun to brew a holiday beer that leaned Into Scandinavian traditions. Taking Inspiration from the Christmas bread that Ballard bakeries sell this time of year, we brewed a strong, malty lager accented with cardamom and fermented with a Norwegian Kviek yeast for a touch of fruity character. Floral and fruity on the nose, Julebokk combines notes of baking spice with a pleasant level of balancing bitterness on the palate.

Malts: C-60, C-120, Chocolate Rye, Pale, Vienna
Hops: Amarillo

On tap at Reuben’s, pours a deep dark amber brown with a medium beige head. Aroma has gentle winter spices, toasted caramel, and bready malt. Flavour is ruined by the kveik yeast, with weird estery fruitiness, winter spices, and bready malt. Reasonable malt base but not a nice yeast profile. Meh.

Amber, hazy, thin head, looks not good. Oh this is a cardamom bomb, and I am not okay with that, it’s harsh. I was expecting a classic Scandinavian winter bock, did not receive that.
