It’s a classic to bring a sour to the party for our annual birthday releases, and when we were looking for a brewery to help us create just the types of sours we love here at Polly’s, we couldn’t look further than the excellent work that Pastore were producing down in Cambridge. A brewery we had a humorous first encounter with - our resident representative of all things Polly’s Arron accidentally hijacking a meet the brewer they were holding in London (before apologising profusely and passing the reins back to Ben and Chris!) back in 2020, we’ve revelled every time we’ve been able to find their beers in bars local to the brewery. Wanting to leap on our shared passion for heavily fruited sour beers, we wanted to create a beer that was equal parts sweet and moreish, but with a defined puckeringly tart edge - step forward passionfruit and lime. Our collaboration beer brings over a tonne of fruit to the party to create a thick, pulpy sour that has that sweetness that sends our fans wild, but with a big hit of dry limey sourness that hits right in the cheeks.

Keg at Fierce Edinburgh. Pours hazy yellow gold with a thin white head. Aromas of lime and passionfruit. Light funk. Taste adds light salt. Zingy finish.

Can 44cl. from Rebelbeercans @home poured into a pint glass. Cloudy orange golden colour, small moussy white head, diminishing quickly, light lacing. Aroma pale malt, passionfruit, lime, mango, tangerine, bubble gum, herbal notes. Fruity taste, medium sweet and sour, tart, passionfruit, lime, mango, resinous notes, light salty notes. Medium body, juicy texture, soft carbonation, refreshing, well-balanced, some bitter notes in the end, good.

(Draught at Akkurat, Stockholm, 1 Feb 2025) Golden colour, slightly hazy, with brief white head. Fruity nose with notes of passionfruit, lime, mango and papaya. Fruity, tart taste with passionfruit, lime, mango, papaya, guava and white bread. No bitterness. More than medium body, with a slight sweetness. Refreshing, tart and fruity. Very nice.

440ml can. Hazy orange gold, white head. Aroma of tart passionfruit and zesty citrus, salty. Taste is quite tart, citrusy, passionfruit, lemon and lime, light acidity, sour and salty (not a Gose though?). Medium bodied.

28/1/2025. Keg at The Dead Crafty Beer Company, Liverpool. Pours hazy/cloudy dark orange gold with a small bubbly white head. Aroma is super tart real passionfruit with a good dose of lime, slightly salty, leafy and herbal. Excellent tartness, and gives a little saltiness. Medium body, quite smooth, prickly carbonation. Puckering finish. Super.
