This beer is a blend of 9 casks from five different batches in our wood cellar, each chosen for its subtle yeast-forward characteristics and soft acidity. Two thirds of the beer dates to late 2018, having spent 21 to 23 months fermenting and aging in neutral oak. The remainder of the blend comprises a two-and-a-half year old cask of spontaneous beer and two casks of 15-month-old farmhouse ale. In addition to the time spent aging on calamansi, the beer was also lightly dry hopped with whole leaf aged Cascade, which amplifies notes of citrus rind, spice, and apricot
