We used Calabrian bergamot rind in the boil and during conditioning to re-create the aromas of zesty Earl Grey tea. As for the coriander, the main sensory compound of citrus fruits that give you that big zesty aroma is Linalool, coriander seed has an insanely high level of linalool in it, so using a subtle amount of ground coriander seed at the end of the boil acts as a turbo-boost nitro-blast for the citrus aroma.
In essence we've created a real quenching, aromatic pale ale. For something even more drinkable, look out for the Square Root shandy made from this very beer as the second half of our collaboration!

Bottle at home in Hackney - sourced from Clapton Craft. Pours clear honey-gold with a fluffy, white head. Interesting concept executed pretty well. Lots of floral Earl Grey character, some grassy bitterness, lemon peel, wheat bread, rind, straw. Light bodied with fine to average carbonation. Finishes with more zesty lemon, fairly true Earl Grey tea, a bit or rindy and grassy bitterness. Nice overall.

Keg at the cock. A light hazed yellow straw coloured pour with a a fine loose white head. Aroma is sharp lemon lime, urinal cake, perfume, kaffir lime leaves. Flavour is composed of crisp light wheat, perfume, lime, lemon, some crisp white wine, lemon, straw, and petrol. Interesting. Palate is crisp and light and tart, moderate carbonation. Fine. Lingering woody lime.
