A Belgian Pale Ale, “Never Mind the Bollekes” pours a deep amber/mahogany color. It has a raisiny malt flavor with a clean, slightly fruity finish from a Belgian yeast strain originating from Antwerp. A heavy hand with the wheat malt provides substantial body to this 5.5% ABV pale ale. “Bollekes” has a low level of bittering hops for the style, but we added a large dose of Sterling and Willamette hops at the very end of the boil to give it a bright, floral flavor and aroma without the bittering.

Had this at Meridian Pint last weekend. Poured a slight hazy amber color, with a nice slightly off-white creamy head. Aroma was lightly toasted malts, some caramel notes, sweetness, light yeast character. Flavor was malty, with notes of spices, yeast, and a little bit of caramel. Pretty refreshing.

A couple 16oz pours at Big Hunt and again at Pizza Paradiso Dupont. Pours a hazy amber with some creamy, white head. Nose has some spice, some over ripe banana, malt, a little caramel, some light bitterness, yeast. Flavor is similar, sweet, malty, some banana, some clove. Medium, sweet finish.
