We added two pounds of cocao nibs from the Dominican Republic to Hop Swirl. The base beer already had aromatics (coconut, vanilla, mint) that are natural allies of chocolate. For us it creates almost an Andes mint flavor that is really fun. The balance is closer to a pale Black IPA than a white stout.

Tap. Pours hazy golden orange, large white head, dissipates slowly, creamy and good lacing. Aroma is fruity, earthy, tropical hint of papaya, dankness, mounds bar. Flavor is light plus sweet, light plus bitter. Not really chocolatey, more earthy. Medium plus body, soft mouthfeel. Quite interesting. I was honestly not expecting to like this; I thought it would be a total gimmick and unbearably sweet, but it was not. The cacao was an accent, adding earthiness more so than Hershey's, and the cacao notes played well against the natural coconut flavors in the hops. This was a minefield of a beer recipe, but navigated to perfection. Kudos!
