Primary fermented with our most tropical Brettanomyces strains for 3 months, and then dry hopped with Australian Galaxy and Eclipse hops. These hops lend a plethora of fruity aromatics, especially mandarin, passionfruit, peach, apricot and a touch of pine as well softening the acidity of our house culture, turning this beer into a massive juice bomb.
This beer is a collaboration with our friends at BarthHaas X utilising their Spectrum dry hop liquid. This 100% natural hop derived product allowed us to conduct blending trials to dial in hop variety and quantity to best complement the mixed culture base beer. The final blend provided the perfect complement to our house culture.

Hazy yellow colour, mediumsized white foamy head. Aroma is citrus, some pineapple, mild funk with some biscuity tones. Flavour is citrus, some tart floral and fruity tones with mild dry wood as well as some funk and mild zesty and sweet malty tones.

Tap at BPBW, Day 1. Murky yellow body, off-white head. Gummy, bit bretty, somewhat chalky aroma. Chalky taste, pineapple, somewhat cheesy. Okay.

On tap at Van Moll Fest, thanks James! Big funk, citrus zest, some berries, light leather, mid-high acidity. Fun.

Bottle from The Beerhive. Hazy golden body with a thin white head that slowly fades. No visible carbonation or lacing. Aroma of lemon, mandarin, grapefruit, pine and a hint of honey. Flavour of fresh mango, passionfruit, mint and starfruit. Medium body with a slick texture. Light fizz. This is a fantastic beer, fresh and fruity. For me, Holy Goat is Scotland’s most unique and interesting brewery. I love their focus on sours but would love it if they produced a higher percentage of non-sour beers, in the same way Burning Sky nails sours as well IPAs/stouts/pales, etc. Holy Goat’s 1867 Double Export Stout and Night Goat porter were sensational, and I think a few more ‘typical’ beers would boost awareness of this excellent brewery.
