Mills Brewing make beer with minimal modern intervertion, relying on local wild yeast cultures and the influence of nature to ferment. Tom Oliver makes cider and perry in small batches, using fresh pressed cider apples and perry pears, spontaneously fermented by wild yeasts.
Foxbic was made using the turbid mash method in the style of traditional Lambic producers. The wort was fermented with Foxwhelp juice and cider lees in old oak barrels for 10 months. The resulting blend was dry-hopped with French grown, whole cone Barbe Rouge.

75cl split with SirAlex. Thanks man. Pours cloudy Golden Yellow with a fizzy white head. Soft and delicate nose and flavor. Red Apples , funk and a touch of Wood and horseblanket. Lovely. Dry mellow. Love this series. 4.3

keg at the jolly judge ...golden ...thin white lacing ..soft earthy funk fruit nose ..big hose blanket ..light sour citrus ..soft dry apple funk ..actually quite a bit of tannin finish

Bottle via the online shop. Hazed straw gold. Slim super sticky white foam. Nose has apple cider lolly. Leathery bretty funk. Grassy hop. Taste has a little baked apple sweetness with clean crisp funky tartness. Light bodied overall with rolling foamy carbonation. Easy glugging tackle for sure. Bright light tart finish.
