We transferred three Pinot Noir barrels that aged an Oat Saison for eleven months onto 750 pounds of Pinot Noir grape must from the Livermore Valley in California. After undergoing refermentation with lactobacillus and three strains of brettanomyces, as well as 4.5 weeks of contact time on the pinot noir skins, we bottled this beautiful sparkling beer/wine hybrid.
Bottle Conditioned to ~3 vol/CO2. Bottled January 2021. Light funk & acidity at time of bottling that will continue to develop over time.

50cl bottle pours pink, no head. Cherry cranberry raspberry nose. Some barrel and vanilla, then cranberry and dried cherry. Dry finish. Tart. Good body. 8 4 8 4 13
