Copper spontaneous-fermented beer matured in oak barrels, the "classic" craft beer for meditation. Behind it there is the same inspiration of our Divina, infact it has sour, vinous and fruity hints, with slight wild-flowers notes.
Excellent with red meat, herbal cheeses and goat cheeses, shellfish and fruit tarts.
Good as aperitif, not just during the summer, but also during the coldest seasons.

Bottle @ proeftafel Van Moll. Woop woop gusher alarm. Hazy orange with no head. Smells leather, brett, sourish. Tastes sourish, brett, fruity. Way too much carbo, medium body.

Capped 750 from Monument in Concord, CA. Batch #1; 2013; Bottle # 4246. Pours translucent bright orange copper with a 3 finger foamy/creamy off-white head. Aroma is sour/earthy/phenolic. Med body. Flavor is yeasty/sweatsox/earthy and maybe phenol. It’s astringent and dry. Some wood is coming out. Getting a lot of sour fruit too. A bit of a struggle to say this is tasty. However, it fits the "out of the air" approach, and I will persevere til I enjoy it tremendously or die. Essayons!

Bottle. Batch 1, bottle 4224. Amber beer with a big cream head. Tart/sour aroma with tropical fruit and oak. Sour/tart flavor with light lemon, light earth, and light wood. Medium bodied. Sour and light lemon lingers with light tropical fruit and light oak.

75 cL bottle. Pours hazy orange with a huge white head. Aroma is mild metallic, vague mouldy and light fruity. Funky, mild citric and lingering fruity. Lingering fruity and light fruity finish.

Hazy amber color; the bottle is a gusher; it has a medium sized compact head, quite persistent. Peculiar aroma, some funkiness, wine, sweat, wood. The mouthfeel is very smooth, there is some residual sweetness, malt flavor, with some strawberry fruitiness, rubber; the bitterness is quite low; a bit of lemony character, and wood.

75 cl bottle @ home. Rated on 29.04.2010.
Beer started to foam out of the bottle immediately after opening. Aroma feels like a sour ale with berries, earthy and woody notes. Flavour is sourish and leathery with earthy notes, berries, some red wine and wood. Palate is way too high on CO2, which makes this rather difficult to drink.

Bottle at DSG 2011. Golden-orange colour with a beige head. Aroma is sour, earth, yeast, fruit. Flavour is sour, earth, yeast, fruit, brett, citrus. Nice Beer.

Bottle @ Danish Summer Gathering, Ulfborg 2011. AMber/golden color, with a tiny head. Very tafrt fruity aroma, yeast and funk. Funky taste some fruit, yeast and brett. Not my thing and far from a barley wine.

Bottle 750ml. @ The Danish Summer Gathering, TFODRBSG11.Unclear hazy medium amber orange colour with a large, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, caramel, woody, light to moderate hoppy, leather, wood. Flavour is moderate to heavy sweet and light acidic with a long duration, leather - funky, oxidide. Body is medium, texture is watery to oily, carbonation is soft. [20110820]
