This bottling is a blend of mixed culture spelt saison inspired by stories of 19th and 20th century Belgian and French farm beers.
The Innermost Chamber is a cuvée comprised of all of the spelt saison we regularly brew at Floodland. Each of those four beers, from a total of 7 batches fermented and aged in barrels, were blended to create a new and distinct beer.
This beer was refermented to condition in the bottle.

Cellar: On release this has been in the bottle about 8 months, and I don't think it has come close to peaking. I expect it to drink best fall/winter 2024 to summer 2025. Best before fall 2027.

Hazy and pale, though a bit dull. Medium head. Soft brett and pale malt on the nose. On the palate, medium body, with a bit of gooseberry, stone fruit, with the same bretty accent. There's a slight acidity that helps to lend some juiciness to the malts. Then the oak kicks in some dryness, so it's pretty complex. Very good.

Poured from 750mL bottle. Hazy yellow gold with small white head and tiny bit of sediment. Soft oak, light tartness, nice balance, light dry brett finish.

Nice sophisticated farmhouse rustic notes, juicy, a bit fruity. Taste is along the same lines. Nice one, awesome balance in here.

Bottle thanks to Anthony. Pours a cloudy orange gold with medium white head. The aroma is yeast, floral, oak, lemon zest. Slick body, lemon balm, oak, yeast, wood, tart, enjoyed this.
