Tasting Notes:
Rich mahogany color. Aromas and flavors of chocolate, cola and tea throughout with floral notes of rose and jasmine from the Brettanomyces. Medium acidity balances well with a dry and slightly malty finish.
The Blend:
40% Propitiation – Aged 15 months in Petite Sirah barrels with Brett Brux and bacteria
39% Salvation – Aged 12 months in Syrah barrels with a mixed Brett strain
21% Lynn – Aged 33 months in Pinot Noir barrels with Pinot Noir wine lees and multiple strains of Brett

Poured from a 520 ml bottle dated February 12, 2021. Aroma is fairly fruity with notes of red wine grapes, blackberry, cassis, raisin, cherry and prune. Light notes of chocolate, caramel and toasted bread. Hints of oak and light alcohol notes. Pours a dark brown, almost black with a large, thick, pillowy, tan head that recedes slowly to a small film that lingers. Medium lacing and small legs. Flavor is slightly acidic with a light sweetness. Light malt notes of toasted bread, caramel and hints of chocolate. Low bitterness and light alcohol notes. Flavor is fairly fruity like the aroma with lots of berries, cassis, cherry and prune notes. Some raisin and red wine grape notes as well. Faint oak notes. A bit of a watery finish. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid dark wild ale. The fruity notes in the aroma had me prepared for a fairly sour beer but this is only lightly acidic. Nice fruitiness in aroma and flavor. Really easy drinking for a dark wild ale, a style I don't usually like.
