[9/19/15] Cask at Chez Moeder Lambic Saint-Gilles in Brussels. As Cantillon Fou’ Foune 2015. Cloudy orange. Lovely aroma with barnyard and some apricot. Sour flavor, funky, with some apricot, lemon, a sweetish note, and a bitterish hint in the finish. Light to medium-bodied. Wonderful, fresh and refreshing.

At Moeder Lambic Fontainas, thanks to 77ships for sharing. Apparently an unblended, still version of Fou’ Foune with the apricots added from before fermentation, allowing them to seep into the lambic more profoundly. Very thin and unstable, snow white, quickly vanishing ’lambic head’ and cloudy peach blonde colour with ochre hue. Aroma, as compared with regular Fou’ Foune, indeed breathes a ton of fresh, sweet, ripe apricots, surrounded by lambic funkiness of white wine, old sherry, sour cream, wet hay, Bretty ’leather’ effect and overripe berries. Fresh, very fruity taste with again a truckload of fresh sweet apricot, very soft and smooth mouthfeel with practically no carbonation as is custom in unblended lambic, some puckering lemony acidity but more powerful in the more gentle and sedated lactic tartness, bready in the middle with drying sourness and some late, grape peel-like wryness in the end. Delicious fruit lambic, fresher and definitely sweeter (in a completely natural way) than the regular Fou’ Foune.
