Pale Sour Ale Aged in Gin Barrels and Dry Hopped

Aging in three gin barrels imparted this pale sour with notes of pine and citrus from the previous resident. We decided to enhance that impression with a late dose of Cryo® hops less than a week before bottling. The juxtaposition of mature barrel-aged mixed-ferment beer and fresh hoppiness creates something new from something old.
