Aging in three gin barrels imparted this pale sour with notes of pine and citrus from the previous resident. We decided to enhance that impression with a late dose of Cascade Cryo® and Simcoe® Cryo less than a week before bottling. The juxtaposition of mature barrel-aged mixed-ferment beer and fresh hoppiness creates something new from something old.

Hazy gold body large foamy white head. Spicy herbal tart funky fruity aroma. Tart spicy herbal fruity flavor. Medium light body moderately high carbonation. 9/2/8/4/17 4.0

Wine glass pour @Sapwood. Sorta hazy pee, see your doctor; lingering ringy lace. Faded flowery, saline sweet nose. Weak point. Sweet lime, mild florals, white pepper, Meyer lemon, crab apple, pickle juice. Not itchy dry, but close enough. Great bubbles, low abv, approachable sour. Sessionable.
