With Quartolet, we set out to prepare a blend composed from four distinct seasons of spontaneous brewing. Drawing from choice barrels up to four years old (the 2018/2019 spontaneous brewing season) we treated the youngest portion of the blend as the priming component. The residual sugar still remaining in that young beer allowed for a robust refermentation in the bottle suitable for carbonating the beer (in lieu of an additional sugar source). It’s an historic approach to bottle conditioning and took us out of our comfort zone in many ways but helped yield a wonderfully complex and delicious beer.

Luscious mix of Brett and lacto yielding honeydew melon and musty, cellar/basement funk. Honey-like malt and rustic wheat with a bit of lemony acidity on the end, as well. Very mild oak and no acetic. Good strength of aroma.
Light oak and malt contributing honey and vanilla notes. Musty funk with herb and pepper notes being quite prominent. Lemony acidity is nicely in check; nothing sharp or intense here. Brett dominates with mild, mellow lacto. If any complaint here, it's that this is TOO mellow. Would like to see a bit more funk. Texture is fantastic, though.

Mostly clear amber body med foam whit head. Tart funk fruit aroma. Tart fruit funk flav. Light bod mod high carb. 7/2/8/4/16 3.7
