Pending Perception is a beer that blurs the lines of convenient categories. What started as a saison made with aromatic malt was then aged in freshly-emptied plum port and plum Jerkum barrels from our long distance neighbors at Mission Trail. The end result is a beer that is robust and rich, with a distinctive barrel character. Pending Perception alerts the senses and stimulates the notion of what a beer can be.

Bottle. Pours clear golden yellow, small white head, good lacing. Aroma is bugs, lemon, oak, stonefruit, dust. Flaky is light plus tart, light plus funk. Medium body, soft mouthfeel

Poured from a 750 ml bottle.
Aroma is fairly fruity with lots of plum and plum liquor notes. Light grain notes. Hints of oak and alcohol. Hints of lemon and prune notes.
Pours a slightly hazy, golden orange with a medium small, moderately thick, white head that recedes quickly to a small film that lingers on the edges. No lacing and small legs.
Flavor is somewhat acidic and a bit sharp with light grain notes. Light bitterness and light alcohol notes. Fairly strong plum notes, a bit fruity but also enriched and liquored. Hints of prunes as well. Faint oak notes.
Mouthfeel is medium bodied with medium carbonation. Low astringency and medium low alcohol warmth.
Overall, a fine beer but it was too acidic and a bit hot. The plum notes are nice and complex with supporting oak. The base saison notes don't really make it through the plum much. A fun beer, but I generally like the non fruited beers from SARA.
