Mixed fermentation session sour beer, long-aged in our cellar and spiced with ginger and orange peel (sweet and bitter).
Brewed with local unmalted wheat ("filiera dei grani alti") and primary fermented with the house yeast BUNNY (Bologna Unknown Native Naughty Yeast).

33cl can from AbeerVinum, Rimini, Italy. Pours blonde, medium hazy, with no foam. Aroma is citrus and spiced/ginger. Body and carbonation are average. Some astringency. Taste is medium sour, a little pungent. Final is acidic but dry.

New batch of the zing at the taproom. Very zesty, lots of ginger, balanced and very drinkable. Prefer this to the old version.

A: clear yellow, thin, white head.
A: ginger, lime zest, mandarin, gooseberry.
T: sour lime, bitter ginger, wheat.
F: soft peppery hops, spicy ginger, tart lime.
P: medium body, slick texture, soft carbonation.
Tricky to pack that much flavour in a session beer, but it works.
