We were approached by Società Agricola La Gilardona in Lombardy with the opportunity and the challenge to make Sake from Carnaroli rice, 'the King of rices'. The result?...a true collaboration and a novel new Sake; brewed by Nogne O, Europe's first sake brewery, using Carnaroli rice from Italy... a genuine European Sake! This 'Nama Genshu' (unpasteurized with no added water) is also 'Junmai', or 'Pure Rice', which means it is made using only rice, koji and our local water. Enjoy this SAKE bold, fresh Sake slightly chilled either on its own or as an accompaniment to a wide variety of cuisines... risotto made with Carnaroli perhaps? Rice type: Carnaroli rice. Polishing ratio (seimaibuai) (精米歩合): 90%. Sake Meter Value (nihonshudo) (日本酒度): +6. Acidity: 4.3. Amino Acid Value 2.5. Bottle size: 720 ml, 1800 ml.

Clear blank color. Ok intensity in the aroma. Full body. Oily texture. Mild basement, rice, herbal, some spices and a bit fruity flavor. Decent warming alcohol. Not to sticky.

From my sake backlog. 350 ml bottle @ the brewery. Clear, pale yellow golden body with no head. Aroma is citric fruit, rice, fruity yeast and some alcohol. Flavor has lots of citric fruit, a hint of ripe fruit, rice and warming alcohol. Well balanced body and refreshing aftertaste with some alcohol. This one has the distinct Nøgne sake signature, but rather bold with quite much citric fruit and strong in alcohol without any lack of smoothness or balance. It simply very nice indeed and quite refreshing, but might give a slighter rough impression for the less experienced sake drinker.

Drank at room temperature. The color is a hint of yellow. The olfactory intensity is high, and the olfactory persistence is sufficient. The taste on the nose recognizes hints of milk. The first impression of intensity in the mouth is of medium strength’s sake. The body is round. The gustatory intensity is normal, and the gustatory persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. In the mouth the aroma bears signs of cooked rice, fruit and apple.

Bottle. It’s crystal clear and rather pale in color, yellowish, straw. No carbonation or head. The aroma at first were quite citrusy, orange and grapefruit at least, but that was just a faint whiff before ripe pears were taking over. There’s some rice too, and sure some alcohol, but the alcohol isn’t pushing in any way. Some grass hints too. The flavor is very fruity, lots of ripe pear, some orange zest, surprising hints of pine cones, some alcohol and a touch of rice. It’s warming and velvety on the palate, with a lasting fruity finish. Yet another wonderful sake from Brock. 170120
