Fruity, Delicately Sweet and Sour
Our Yuzu Sake has a classic Sake character with the presence of sweet and tangy yuzu. Kochi prefecture produces about half of the entire yuzu production in Japan and Tosa is especially well known for the best yuzu production. This mountainous region provides the perfect combination of a cool climate and beautiful water. Yuzu is harvested around the end of October to the beginning of November when it reaches 60-70% of its full ripeness. In order to preserve its freshness and acidity it is essential that Yuzu is pressed as soon as it has been harvested.

Poured light grapefruit colored, no head.
Yuzu dominates in aroma. Some warmth coming through in the back. Flavor has similar notes. Light sweetness in flavor. Yuzu finish. I could never have guessed this to be a sake.

Sample, thanks oh6gdx! Hazy pale yellow, small head. Intense aroma of yuzu juice. Sweet with medium body and clean, rounded mouthfeel. Syrup and piney yuzu. Hints of grain and licorice. No bitterness.

6/10/2023. Bottle shared at Ulfborg. Region #438. Japanese region 27/47. Pours unclear very pale yellow with a very small frothy white head. Aroma of yuzu, citrus, orange, caramel, flowers. Quite sweet with a tart edge. Moderate body, very soft carbonation. Sweet lemon drizzle cake finish.

300ml bottle from Japan Centre. Hazy apple yellow colour, no head and aroma of juicy citrus zest, yuzu, lemon. Taste is sweetish, tart, yuzu, lemon, with some rice and fruity notes, sourish. Medium bodied, low carbonation, dry tart yuzu acidic finish. Quite drinkable.
