An elderflower & nelson sauvin Saison. Pastore brewed this beer with one of their favourite yeast suppliers Bootleg Biology who are based in Nashville, Tennessee. who supplied the local capture Nashville wild yeast which was used to ferment this saison. They then added locally foraged elderflower and nelson sauvin whole hops.

Bottle at home in Hackney - picked up from Caps and Taps. Mild gusher! Pours faintly hazed yellow-gold with a small, creamy white topping. Interesting beer. Lightly sweet, with sharp lemony bite, fresh green pepper vibes from the elderflower, light funk, decent acidity. Light bodied with active, massaging carbonation. Quenching finish, green pepper, white pepper, a little southern hem hop poking through, further citric tartness. Good fun overall, though a 375ml is certainly hitting the upper bound of how much I'd like to drink of this beer.
