In the Meadows is a blended wheat saison.
The 2023 blend was created from two distinct beers. The first was brewed with wheat and spelt, hopped with flower grown in Germany and New Zealand, open fermented and then aged in neutral oak. The other was brewed with wheat and oats, hopped with flower from Washington and New Zealand, and barrel fermented in neutral oak.
This beer was refermented to condition in the bottle.

Pale and hazy, slightly dull from the haze. Not much head. The aroma is big, bretty with floral, honeyish complexity. There’s a nice brett accent, a decent underlying hop bitterness, and again just a touch of malt sweetness. The bugs are lively, expressive on this. Excellent complexity and balance. Top of the line stuff.

Aroma: amazing farmhouse notes, bold, some flowers.
Taste: along the same lines, crispy, complex, balanced.
Overall: elegant and lovely 👍❤️

Poured from 750mL bottle. Hazed yellow gold with small white head. Really nice saison with feint funk and just a hint of flowers (yes, plural). Not generally a big spelt fan, but this all blends together nicely.

Bottle shared at Craft Beer Junction - Bermondsey. Cheers! Pours lightly hazed yellow-gold with a small, creamy white head. Lightly sweet flavour with restrained lemony tartness, slight minerality, nice funk. Light bodied with fine carbonation. Great balance to finish, further semi-ripe lemon, nice tartness, low acidity. Wonderful.
