An ode to New England, these spontaneous fermented ales are brewed using local malted barley, raw wheat, and aged hops. Resting overnight in our coolship, they are inoculated by the native microflora unique to the area we inhabit.
After several years aging in oak, Habitat: 2024 Blend 1 showcases aromas of stone fruit with a light hop character and sweetness.

Clear, deep brassy-golden with a large, off-white head that settles out at cover.
Funk and cheese rind in the nose with mild oak and lots of lemon. Almost a tea-like quality to it; rich black tea. Smells like it's going to be very lacto-forward.
It is quite lacto-forward but not in a bad way. Not too much of the biting, drying cheese rind-like lacto that gets very cumbersome quickly. A lovely maltiness, with soft, chewy wheat helps balance and the tight, fine carbonation helps disperse the acidity, as well. Still a fair bit sour, but no acetic, thankfully. Not much oak tannin, though some good oak flavors at points. Orange, lemon, black tea and mild funk with mild Brett, but mostly lacto-induced acids. Very nicely structured, polished beer that should age gracefully for many more years (but still enjoyable to drink now).

Bottle from my brother: pours light orange with loose white head. Funky, botanical, lightly herbal, stone fruit. Taste is funky, tart, light sweetness. Has some complexity. Solid.

Pours hazed gold into a tulip. Bright white micro head with excellent retention recedes to coat surface. Tart apricot, apple and peach aromas. Sharp and dry with tart apricot, aspirin and peach fuzz upfront turning to lactic pith and peel in the lasting finish.
