The collection of Imperial Beers would not be complete without a stout. Very seldom do stouts make their way into our production schedule, but when they do happen to arrive, it seems they grace our palates with a resonating effect. The elusive stouts come and go and we wait for them to resurface throughout the year to have their flavors again refresh our consciousness of their existence. As we rekindle our relationship with them we are reminded of their awesome complexity and dynamic as a beer. It is for this reason I claim our stouts to be so special. Although I am a serious brewer of the hoppiest IPA and Pale beers, I harbor a special reserve to seek and craft the most significant and intricate stout formulas. To me they are a beer of wholesome sustenance placed in a separate section of my beer appreciation archives. This one is brewed with carob, which is a uniquely good fit because of its chocolate-like qualities and its story of sustenance. Carob is a legume of pods that is mostly ground into powder and used as a cocoa substitute. It is rich in sucrose and protein and packed with minerals and vitamins. Carob is also known as St. John's bread or locust bean. It is assumed to be the "locusts" eaten by St. John the Baptist, which helped sustain him in the wilderness. Carob’s great cocoa-like quality adds a nice touch to the roasted and rich malt character in this beer.

Tap at Brickhouse pre GTMW 2013. Big chocolate tones. Really sessionable for the ABV. Big brown chocolate tones. Really easy drinking. Super sweet.

RBWG14 Trip Rating #125. Bottle shared by deyholla at the Grand Tasting. Pours a dark brown color with a thin tan head. Decent head retention. Aroma of tart vegetal notes, carob, earth. The taste is roasted malts, chocolate, herbal and vegetal notes. Medium bodied.

Bottle share late night RBWG. Old bottle: 6-8 years, really. Pours rich brown with a creamy tan head. Lots of chocolate here, earth, faint tangy dark fruits. Medium bodied with fine carbonation. Sweet finish, more tangy dark malts, dirt, baking cocoa. Sub par.

Opaque black beer with a nose of dark chocolate. Palate is silky and a little dry. Rich unsweet dark chocolate, pretty full on. Espresso like bitterness. Not much else going on until the finish when a sliver of hop comes through. Okay but it’s bit one dimensional, really needs something to balance the bitter chocolate.

750mL bottle, sent from gn0sis (thanks Eric!), split 4 ways, pours black with minimal tan head. Aroma of carob upfront, vanilla, molasses and licorice. Flavour is very strong on the carob, which dominates, with secondary flavours of molasses and vanilla. Silky smooth, light bodied, but strong flavours. Solid.

bottle from kihoskh. Very dark brown, small smooth brown head. aroma of roasted grains, coffee, cocoa, faint herbal note that might be from the carob, but could also be from hops (bottle is from 2007). flavor is roasted malts, brown sugar, coffee, cocoa, syruppy or honey aroma. hops not really detectable as a flavor, but i guess all that bitterness gotta come from something. Good balance, and the beer comes off as rounded and well aged. end is roasted malts, cocoa, coffee and faint herbal sweetness.
