[Character]
Somewhat dark in color, this Dunkel has a medium body with notes of dark fruit, toasted bread, toffee, caramel and biscuit, but still offers a light dry finish.

[Naming]
The Black Forest in Southwest Germany has been the setting for many a legend and fairytale since ancient times. Stepping into the forest, who knows what mysterious experience one may encounter. As curious as the imaginations of the local folk of yesteryear, these beers in this two-part mini series are also rich in flavour, and have in their spirit a somewhat adventurous twist.

When it comes to making German styles of beer, it's hard to deviate from what works. The second of our two-part German lager miniseries is our Dunkel. “Dunkel”, which is German for "dark", is a malt-forward lager known for its smooth body. These beers are often served in large 1L glasses in Germany, so also being easy drinking is critical to the style. For the base of this beer, we stayed mostly in line with tradition, using a base made up of Munich malt, with a touch of Vienna for body, and some dark malt for some colour addition. A soft and low bitterness was used for this beer, sticking with traditional Tettnang hops for some flowery herbal character. As a "not-so-secret" ingredient, we added some star anise during the whirlpool, adding some dark fruit and spice character that blends well with the caramel malts, and adding some depth to the beer without detracting from its drinkability. This beer was fermented with our Bohemian lager strain and cold conditioned to allow those flavours to really develop. Don’t let the colour of this beer fool you - it is an easy one to throw back without being heavy on the pallet. We hope you enjoy this little taste of classic German beer with a small KBC twist.

KBC One Day in the Forest
Star Anise Dunkel 5%

Deer brown verging on black with thick beige foam and a soft chocolate aroma. Light bodied, chocolate with banana bread notes and hints of anise.

Well balanced with a touch of black licorice in the finish. Gotta say I’m digging this more than the honey maibock.

Can. Quite dark brown, almost black, with a thick tan head. The star anise hits you in the nose quite forcefully, with chocolate, caramel, dark bread, and berry notes. The spice makes it seem more like a Belgian dark. Flavor is more dunkel, though a bit roasty in the direction of a schwarz. Spices are lighter than in the nose, though still there. Chocolate, bread, fruits. I like it, but it doesn't seem like a dunkel at all because for me, a dunkel can't taste like star anise. Also has a fruity, hoppy, spicy tang in the finish. Light to medium body and quaffable.
