The Dreaming Of... series, where we explore our favourite hop varieties through the medium of a single hop DDH IPA, returns with an entry we are shocked we haven't got around to brewing before. Mosaic is a mainstay here at Track; it's a major player in the flavour profile of Sonoma. In fact, it's only a couple years older than Sonoma, first entering the market in 2012.

For this beer and the coming year, Matt and Harry have hand selected Mosaic from Lakeside Ranches, a farm in Salem, Oregon established by fourth generation hop growers Erica and Jake Lorentz. Their Mosaic has the best of everything the hop can be; intense tropical fruitiness underpinned by delicate florality and grassy freshness. We have given it the room to speak for itself by solely (double) dry-hopping this IPA with the fresh 2024 crop and we feel it champions the variety in the way it deserves.

0,44l can from KCM Ruoholahti. Bbe 190825. Murky yellow beer with quite small head. Aroma and flavor is juicy tropical fruits, hops, dank and creamy sweetness. Tasty.

Hazed orange topped with a lasting off white head formed of frothy bubbles.
Nose is juicy tropical fruits, hop spice, pine resin, pineapple, grapefruit.
Taste comprises orange pith, grass, grapefruit, pine needle, ripe melon, papaya.
Medium bodied, fine carbonation, semi drying close spliced with juicy come lightly resinous hop bitterness.
Tidy hop juice.

Can. Hazy orange gold beer, small bubbly pale cream colour head. Light palate, a mild dryness, good fine minerally carbonation. Light malts, a light bodied but forward creamy sweetness, but overdone. Modern Mosaic hops deliver juicy mangoish tropical fruits, hop spice and a touch of citrus. Blueberry and candy fruits coming to the fore on the back end. Nice job. Mosaic that resembles what this hop was consistently like before it went stratospherically mainstream.

440ml can. Murky yellow, small white head. Aroma of sweet tropical fruits, guava, papaya, berries and hop spice. Taste is sweet and fruity, mango, guava, papaya, berries, peppery hop spice and pine, finishing gently bitter. Medium bodied. Very nice.
