In the Blazing Forest Blend 2 was made to explore different aging lengths on some beers, double barrel aging, and blending beers of different ages. The result incorporates barley saison brewed in March 2023, oat and wheat saison brewed July 2023, and spelt saison brewed in January 2024. Blended and bottled in December 2024. The younger beer from early 2024 was fermented and aged in one of our oak foudres before being transferred to a neutral oak barrel, and we find that the youthfulness the larger foudre imparts changes the path of the fermentation, and then allowing it to soften up in a smaller barrel creates a distinct character for the "young" beer in this blend which helps drive the hop aromatics of the blend.
The older barrels were some I chose as being in the TCE-level of quality and aged character, but the blend on this makes the beer lighter and more rewarding directly after opening the bottle. If you want a blend that contains both youthful exuberance, is easy to drink, but also has a backing of deep complexity of aged beers like TCE or Innermost Chamber, then this is your blend. It's super citrus-rind forward, a little funky in the best way, and bright and spritzy with a refreshing hop bitterness.

750mL bottle. Pours hazy blonde with a white head. Rustic and spicy saison yeast and grainy malts on the nose; good funk. Flavour has tons of funky, rustic yeast, great funk and some some grainy malts. Very nice.

Aroma: nice funk and oak, fresh and crispy.
Taste: along the same lines, assertive, intense, and prominent.

Hazy pale. Medium head. Refined brett, floral notes, pale malt, very appetizing. Fairly tart, some florals, decent brett. This has more acidity than most Floodlands, which serves as a restraint for the bretty, floral character. Still solid.

750mL bottle, pours a hazy pale golden with a small white head. Aroma has lots of toasted grains, plenty of bugs, oak, and rustic farmhouse notes. Flavour is dry and buggy, with plenty of wild yeast, oak, rustic notes, and lots of toasted grains. Dry, grainy, rustic, buggy, with light acidity. Very good.

Poured from 750mL bottle. Hazy yellow with small white head. Nice balance of oak, spelt, and saison yeast with soft mixed cultures. Well constructed.
