Belgian-style Blond Ale hopped with Riwaka and aged solera-style in our American Oak foeder. Solera is the act of removing only a portion of beer from the foeder and replenishing it with fresh wort to referment and continue aging in oak with traces of every batch before it.

For Volume II, you can expect notes of fresh squeezed grapefruit juice, spring hay, Bazooka bubble gum, stewed pears, and classic Belgian spice.

16oz can from Tavour. Clear golden pour, sturdy white head. Yeasty aroma, sourdough. Taste is yeasty, grassy, fruity, bread dough. A little bite at the finish, not necessarily bitter though

Can from Tavour drunk 6/29/25.
Nice and clear, deep bronze-golden. Large, off-white, pillowy head, strong retention.
Belgian yeast leads the way, which is nice to see. Wouldnt guess Riwaka, but this is also 3 months old. It IS very fruity, though, and there is certainly mineral. But none of the classic matchstick (which is probably a good thing). I assume they just added a pinch of hop to fruitify it, not to try and highlight the hop.
Oak is notable and lovely, in the flavor, with a round, structured feel with a touch of vanilla-caramel-butter on the end. Fruity, gently spicy Belgian yeast is prominent and well-done, containing nothing crude (no bubble gum, low clove). Just a well-rounded, well-aged, balanced and mellow, yet flavorful beer with excellent malt depth (honey, white bread, light biscuit), good attenuation and great tannin structure from the barrel, without it being overdone. My first Elder Pine beer, and I'm an instant fan.
Love the restraint and respect for tradition here. Depite all the interesting things they've done here (solera, oak, riwaka), this is a classic Belgian blonde first and foremost.

Can from Tavour. Pours clear gold with a large frothy white head that laced. Aroma suggests Brett funk with some fruit. Med body. Dry and funky. Brett for me. There's yeast/spice and pear. Not getting banana. Good flavor.

Tap. Pours hazy golden, medium off white head, good lacing. Aroma is buttery oak, dust, grapefruit. Flavor is light sweet, oaky, hint of bretty funk. Medium body. Quality.
