Our 2017 recipe follows in the footsteps of 2015 and 2016’s award winning batches - a relatively simple malt bill, Australian-grown hops and a painstaking fermentation regime.

The resulting beer was aged through Melbourne’s tumultuous summer in fresh Starward whisky barrels. The extreme swings in temperature allow for a faster uptake of barrel character than would be possible during more consistently cool days.

APPEARANCE: Deep copper with a slight haze.

AROMA: Subtle whisky notes, vanilla and candied orange.

FLAVOUR: Rich mouthfeel with sweet boozy front palate, malt sweetness on the middle palate, with a medium-dry finish and moderate bitterness.

MALTS: Ale, Dextrose and Pale Crystal.

HOPS: Super Pride and Ella.

Tap. Starward rather than Lark barrel/s this time. Amber with a small cream head lasts OK. Massive sugar plum and butterscotch gentle spices, some overt alcohol. Very sweet indeed, lush and clean with spices incl vanilla caramels and peppery oak pinching things off. A fairly deep breath of booze at end. A little clumsy with the bitterness and spices. Feels every bit of its 12%. It’s pretty good but the sense that the stars aligned for the 2015 version is there. 90ml of this was plenty and I happily drank 750ml of that.

Tap at Slow Beer, Fitzroy, Melbourne. Poured a hazy medium amber with a thin white head. The aroma is rich sweet malt, tropical fruit, honey and alcohol. The flavour is moderate sweet with a smooth, rich, toffee caramel, light alcohol palate. Medium to full bodied with soft carbonation. Awesome. 12% but really smooth and no alcohol burn.
