This wild cider consists of our own house grown Redfield and Dolgo apples. Blended post fermentation this tart, dry cider has a light body , mild acidity and pours a pinkish red color.

Woodstock draught, 4/24/25.
Clear, rosé, lightly carbonated.
Big Brett is fruity and playful. Doesn't seem to have the malo-lactic qualities of their more French style ciders. But what it loses there it gains in approachability and more clarity of apple. Fleshy, juicy, bright. Low acid.
Juicy, lightly tart on the finish but with very low acidity. High attenuation and chewy tannins. Ample body with carbonation helping give a bit of a boost. Fruity to the max with more unadulterated apple. Depends what you're in the mood for but I may prefer this to the malo-lactic stuff. Some of it is too biting.
