Although the pink pepper is officially not a real peppercorn but a berry, it still gives the Lambic a delicious peppery aroma, which is also reflected in the flavour. The aftertaste is fruity and slightly spicy, without being overpowering.

MBCC. Hazy dark golden with a small white head. Aroma is sweet, malty, light pepper, wood and barnyard. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 240525

Draught Faint transparant head over veiled copperish-yellow beer. Wild yeast, Brettanomyces, horseblanket, and stonefruit as nectarine, as well, yes, a peppery aroma. Sulphur. Pink pepper - and obvious, recognisable, but not overdone, subtle. Again stonefruit, lactic acid. Light acidthinning, almost no carbonation. The pink pepper is a trouvaille, it blends seamlessly in, without overwhelming, making the lambic more complex.
