Cascade isn’t the newest of hops, but this classic American variety which single handedly started the American hoppy craft beer revolution is the perfect counterpoint to the familiar modern IPA hops. Here it teams up with Mosaic for a wide spectrum of hop character. Mosaic brings the punch of tangy pineapple, sticky ganja like pine and citrus while Cascade adds softer notes of honeydew melon, sour apple Jolly Ranchers and sweet lilac pollen. Clear, bitter, crisp; a pure expression of modern California IPA.

Poured up on tap at Tipsy Cactus where it exhibits a clear gold colored body that supports a nice white head of foam that leaves behind spotty lacing. The aroma modest offers up orange marmalade, grapefruit, tangerine and then some spicy to woody hoppiness. The taste delivers pleasing citrus hop bitterness in the form of grapefruit, tangerine, a touch of lime and then a thin layer of orange marmalade. It picks up spicy to woody hoppiness to midway as the lime seems to gain in strength. Fun brew that creates loads of body and remains very low in sweetness. Good stuff.

Tap. Pours clear golden yellow, small off white head, good lacing. Aroma is pine, trees. Flaky is light sweet, medium bitter. Medium body.

From can of 1.4.21 to pint glass. Aroma is pine and dank, with moderate pineapple in the back. Pours clear faint gold with full, sustained white head that lingers the entire pour. Flavor is pine, dank and forest. Finishes dry with a bitter kick. As it warmed, slight retained sugars show in the end of the palate. Tropical fruit is in the distance.
