Northern Wild 006 is an experimental collaboration release with Hogans Cider that saw us co-ferment Hogan’s apple juice with our own Northern Monk wort before aging.
The result is a unique beer / cider hybrid made using wild yeast from apples and Brett Bruxellensis. Expect funky, tart flavours and a clear apple character, with a hint of smoke and malt sweetness on the finish.
Each 750ml bottle is hand numbered.

Bottle at CBJ TASTING. Hazy-opaque pale gold. No head. Aroma is tart and yeah cider. Flavourwise it's boozy cider. Very dry and tart. Light. Thin . Soft-fizzy carbonation. Long dry somewhat astringent finish. Dece.

Interesting stuff. Lightly sharp, some salty sweat, lemony twang, little musty cellar, apple peels. Mildly refreshing. Good one.

Bottle. Bier Huis Ossett. Birthday gift from the missus. Thin and acidic with notes of acetone throughout. Shame because others in this series have been mostly top tier.
