We brewed a low alcohol lambik - a true meerts, on which we macerated Pineau D’Aunis and a small portion of Chenin Blanc, originating from the illustrous Jean-Pierre Robinot. We macerated the grapes for over five months on a wooden barrel, with a final fruit intensity of over 350 grams of spent grains per litre of grape meerts. All grains for this brew & blend were sourced in Pajottenland.

From bottle at Remko's Bierproefavond november 2025. Didn't take notes, just enjoyed the beers and good company. What I do remember: Nice amount of grape, grape must. Lovely Meerts.

375mL bottle, pours a cloudy dull peachy blonde with a small white head. Aroma has a real nice white wine grape must character, moderate funk, and a touch of leather. Flavour has a real nice white wine must, barnyard funk, and light leather. Musty and funky. Excellent.

375mL bottle at Lambik-O-Droom. Pours murky yellow with a white head. Tons of white grape must on the nose, a bit sweaty. Flavour has tart white wine grapes, a bit musty, good funk. Very nice grape skin expression.
