Colour Five was brewed with raw Hill Country well water, Texas-grown grains, a blend of fresh hops and aged hops from our barn, and was fermented with our mixed culture of native yeast and bacteria. It was aged in neutral oak barrels for roughly a year, then refermented in stainless steel with about 2,000 pounds of Texas blueberries for about six weeks. The blueberries went through our crusher / destemmer prior to refermentation and we performed pump-overs throughout refermentation for good flavor and color pick-up from the fruit. Colour Five was then 100% naturally refermented in the serving vessel.
Our 2018 batch of Colour 5 will be released this Friday at 4pm when our tasting room opens. It is 6.5% ABV, 9 IBU’s, 3.22 pH, and has a specific gravity of 0.999. It was packaged on March 27th, 2018. There are about 2,250 bottles available (500mL/$20) with a bottle limit of six per customer per day. It will also be available by the glass at our tasting room. Outside of special events, Colour 5 will only be available at Jester King.

Color is deep opaque purple with a very short lived lavender head. Aromas are standard Jester King sour with a little berry in the back. Flavors are similar to nose, a bit more berry shows up but it's still mainly tart. I wouldn't guess that there was blueberries in there but from the label. Good basic sour. Nothing special.

Tip Tap draught, 3/12/23. Clear dark violet. No head. Blueberry and malo-lactic character is endearing, clean, not overly acidic. Low sweetness perceived. Vanilla, meaty blueberry. Soft, juicy, very dry, very light bodied, approaching too thin of texture. Buttery, juicy blueberries are lovely but the beer is super lacking, especially at this abv. For 7.1 I expect a lot more malt depth.

Draught@CBC2016. Red colour, no head. ARoma is red currant, blueberries, some wood and mild herbs. Flavour is fruity, floral, some berries and slight wood in a quite big tartness.

Poured from 500mL bottle (after Weathered; from Jan 2016). Blueberry, tart wild yeast, nice berry character, but does seem past it’s prime.

500 ml bottle into signature tulip glass; Blend Two, bottled in 1/2016. Pours slightly hazy/cloudy deep ruby red, light orange/purple color with a 1 finger dense and fluffy light pink head with great retention, that reduces to a thin lace cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big sour/tart/tangy blueberries, fruit skin/seeds, lemon, lime, peach, plum, cherry, cranberry, pear, apricot, red/green apple, currant, red grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, leather/musty Brett funk, red wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of blueberries, fruity/funky/acidic/spicy yeast, oak barrels, and pale/wheat malt notes; with big strength. Taste of huge sour/tart/tangy blueberries, fruit skin/seeds, lemon, lime, peach, plum, cherry, cranberry, pear, apricot, red/green apple, currant, red grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, leather/musty Brett funk, red wine vinegar, and yeast/oak earthiness. Light-moderate fruit/lactic tartness, fruit tang, and yeast/oak tannin spiciness on the finish. Lingering notes of tart/tangy blueberries, fruit skin/seeds, lemon, lime, peach, plum, cherry, cranberry, pear, apricot, red/green apple, currant, red grape/wine, oak, hay, straw, grass, wheat, cracker, white bread, light pepper/funk/vinegar, and yeast/oak earthiness on the finish for a good bit. Amazing complexity, robustness, and balance of blueberries, fruity/funky/acidic/spicy yeast, oak barrels, and pale/wheat malt flavors; with a fantastic malt/tart/spiciness, and tangy fruit balance; with zero puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tart/spiciness and tangy fruit. Medium-plus carbonation and light-medium body; with a very smooth and moderately creamy/grainy/acidic/tangy/tannic balanced mouthfeel that is fantastic. Zero warming alcohol for 6.3%. Overall this is an amazing fruited sour/wild ale! All around incredible complexity, robustness, and balance of blueberries, fruity/funky/acidic/spicy yeast, oak barrels, and pale/wheat malt flavors; very smooth and fairly crisp/refreshing to drink with the mellowly acidic/tangy/tannic/drying finish; not overly lactic. Amazing balance of super jammy blueberries and Brett/Bacteria complexity; with great oak presence, and pale/wheat malts against acidity. Minimal residual sweetness with crisp acidic/tangy dryness. A highly enjoyable offering, and amazing top tier quality style example as expected. Aged amazingly over 3.5 years.

Very subtle. Lightly sour, good dose of fruityness and blueberries, and a bit of goatyness. Fairly dry. Pleasure to drink, but maybe not the right moment to fully enjoy it
