For this series, we wanted to take what was our stout brewing SOP on our old brewhouse and hybridize it with what was, at the time, our brand-new custom brewhouse, designed for making big, imperial stouts. So we made our biggest beer to date, mashed in what would have been three separate mashes previously, and ran off the wort into the kettle without sparging, filling it to the brim. When it was all said and done, a portion of this beer had been boiled for well over 30 hours. Next up, we give you the second batch we brewed, Berk, a 12.9% absolute unit of an imperial stout, aged 43 months in 15-year-old Buffalo Trace Bourbon barrels.

12oz (thx, Terry M.!) @ Ryan's. Pours like oil.
Aroma: heavy, woody, some sweetness.
Taste: thick, very woody, noticeable toasted barrel, somewhat smoky.
Overall: pretty good one, but to me it's like just another (but quality) liquid wood bomb.

Pours super thick. The aroma is just thick, rich stout...the umami and dark sugars are intense. I mean this gives off sirop de Liege vibes, which is fucking awesome. Yeah, this is all about that heroic boil and rich barrel. But excellent.

Poured from 355mL bottle (bottled 12/2023). Thick near black with no head (not as thick as Dolk - probably a good thing). Woody bourbon bomb. Preferred the aroma of Dolk, but this has a more drinkable texture (Dolk stuck in my throat, this is thick, but goes down smooth). Super boozy. Ended up with the same overall rating.
