Barleywine and Wheat Wine blend aged in a small format Distillery 291 Rye barrel for 10 months.

The idea behind SPELT DADDIO came rather randomly after we received this amazing Distillery 292 rye barrel for another beer. It smelled so incredible good that we just had to get another one barrel. With none other than leftovers from previously batches we ended up blending a Barleywine and a few Wheat Wines to fill the rye barrel.

All batches made from our syrupwine methods where we split the wort in two and boiled one half for a whole day until it basically is a thick caramalized syrup.

This beer is a homage to our friend Simon also known as Daddio after he bought 13 bottles of SPELT DADS - one for each time he visited Peders until they was sold out.

Tap @MBCC 2025, Yellow Session. Clear very dark red brown, beige head. Malty aroma, barrel. Sweet, thick and boozy flavour. Malty syrupy, woody, dried fruit, bourbon. Great warmth.

Draught @ Mikkeller Beer Celebration, 2025. Early Friday. Pours amber with a small head. What a mess. Sticky syrup drops. Sweetness. Wauw. Talking of dont believe the hype - P.E said it deacdes ago. 2.8.

On tap at MBCC 2025 (Yellow session), pours a deep dark brown/black with a small tan head. Aroma brings out lots of spelt, toasted grains, bready caramel, and brown sugar. Flavour is full of intensely spicy rye, bready toffee, caramel, and massive bourbon. Rich, decadent and spelt-like. Fantastic.

A lot of barrel, some spirit, a bit of meaty notes. Quite sweet and rich, nice.

MBCC 2025, Yellow Session. A clear reddish brown beer with a beige lacing. Aroma of bourbon, raisins, strong malt. Taste of dried fruits, raisins, bourbon, creamy mouthfeel.
