Nels is a saison with Nelson Sauvin hops and foraged fir tips. Last summer we ventured to the Cascades to forage fresh Noble Fir tips and added them to a blended saison. After naturally conditioning in can for six month, Nels presents bright notes of grapefruit, kumquats, bergamot and pine. Available today in the taproom.

Can. Pours hazy yellow, medium white head, good lacing. Aroma is hoppy, pine, grapefruit, passionfruit. Flavor is light sweet, light tart, lovely hops, light spruce. Light body, delicate mouthfeel. Fucken awesome.

Pours hazy yellow with an off-white head. Taste is tart fruit, white wine, funk, white grape, nice.

On tap at Fair Isle, pours a hazy blonde with a small white head. Aroma is dominated by bright Nelson hop tang, which melds beautifully with the wild yeast expression; can’t say I detect the fir tips. Flavour is much more expressive of the fir tips—being the dominant flavour—accentuated by some hop tang, a nice wild yeast character, and spicy rustic saison yeast. Finishes intensely earthy with those fir tips, maintaining that saison feel though with the high carb, bone dryness, and complex yeast character. Excellent

Tart, herbal, a clean pale malt. The fir tips aren't as bold as normally is the case, but I like that.
