Concentrator (8.8%)- Smoked Doppelbock. Named for the long decoction and wort boil, Concentrator is brewed to an original gravity of 24 plato. Brewed with 30% smoked malt, munich, and a pinch of roast. We decocted and boiled this dopplebock over direct flame until the color and concentration of sugars were just right. This beer was open fermented in a cold box at 5c, allowing the natural rise in temperature generated by other energy of fermentation. The fermentation peaks at 10c, and as it slows the temperature naturally falls back to 5c where the beer was allowed to condition for 4 weeks.

Sample at the roost. Listed in the smoke section. Mostly clear dark garnet amber with a ring of off white head. Nose has date, malt, candy sugar. Some baking spice. Some smoke like burnt candy. Flavor is meatier. Sausage arrives along with lightly smoked wood chips. Candy feels more like cough syrup here. Dates and raisins are still there and the baking spice gets crushed by smoke. Tannic and oily finish.
